Layered Berry Smoothie Recipe

Temperature is dropping, and sweaters are starting to be used. But we still get the random 75 degree days quite often, and on those days, we embrace our last bits of summer! The other day the boys and I decided to go ahead and indulge our summer sweet tooth, with a layered berry smoothie.

The boys were of course on board with this project! we started early morning with 2 tablespoons of chia seeds and half cup of sweetened coconut milk, in my favorite jar from Mom Life Must Haves. We love the flavor of coconut milk, but you can really use any liquid of your choice. the boys checked the cup constantly until they saw that the seeds were getting puffy and ready for our next step!

But what’s the hype about chia seeds?!

While we waited, we decided to learn a little about chia seeds! Did you know? 2 tablespoons of chia seeds contain potassium, antioxidants, fiber, omega-3, protein, magnesium, and more calcium than a glass of milk! I don’t know about you, but I am over here sprinkling chia seeds on everything that comes my way! I personally just love the texture and that I can flavor them in any way I want, but thanks to my forever curious boys, I discovered that I have been adding a tremendous nutritional value to our diet! win win right? Do I get mom points? I could really use some of those!

Ok but I know you are here for the smoothie recipe, so I will get on with that! The process was quick and simple, once the chia pudding was ready to go!

Layered Berry Smoothie

Ingredients

  • Chia pudding (2 tablespoons of chia seeds and half cup of liquid)
  • 3 Cups of frozen berries
  • 1 Cup of vanilla yogurt (you can use non dairy or any yogurt of your preference)
  • fresh berries to layer and to garnish.

Directions

  1. Add the frozen berries and yogurt to blender and blend to your favorite consistency. If you would like, you can add liquid, but I didn’t.
  2. Pour some of the blended smoothie on top of the chia pudding.
  3. Add a layer of fresh berries and a tablespoon of yogurt.
  4. Pour more of the blended smoothie on top.
  5. Use fresh berries to garnish.

This resulted in an amazingly sweet and well healthy treat for us to celebrate our last bits of summer! We even had leftovers so we made them into layered berry Popsicle! More mom points? I think so!

One more thing I love about this recipe is that you can always change it around to use seasonal fruits, and it will always be delicious!
